I find peanut butter cookies dry too! I hate using shortening, and so all the recipes I make are made with peanut butter. I think the shortening gives them extra chew so that they are not too dry.
This recipe looks great!

no way! i love spanish peanuts but you don’t find very many recipes for them. mostly you just find them in ice cream, so this is definitely getting bookmarked. thanks for sharing the recipe. they look delicious.
